Ingredients

  • 4 ice-cream cone waffle bowls (use one that has 50 calories)

  • 4 cups frozen, unsweetened pineapple chunks

  • ½ cup light coconut milk (the canned one from the international aisle)

  • 1 ¼ teaspoon Truvia Original Calorie-Free Sweetener Spoonable Jar***

  • 2 tablespoons unsweetened, reduced-fat shredded coconut

  • 2 teaspoons coconut rum

Directions

  • 1.

    Place the frozen pineapple chunks in a food processor fitted with a chopping blade.

  • 2.

    Process until finely chopped.

    Add the coconut milk and process until just smooth, scraping the sides of the food processor bowl with a spatula if needed.

    Add the Truvia Original Sweetener, coconut, and rum.
