Ingredients

  • Pastry for single-crust 9-inch pie

  • 1 can (15 oz.) pumpkin

  • 1 can (12 oz.) evaporated fat-free milk

  • 3 eggs***

  • ⅓ cup + 1 ½ tsp of zero-calorie Truvia Original Calorie-Free Sweetener Spoonable Jar****

  • 1 tsp vanilla

  • 1 ½ tsp pumpkin spice

  • ¼ tsp Diamond Crystal® kosher salt

  • Light whipped topping (optional)

Directions

  • 1.

    Roll out pastry on floured surface 1 inch larger than inverted 9-inch pie pan.

  • 2.

    Ease pastry into pan; flute and trim edge.

  • 3.

    Mix pumpkin, evaporated milk and eggs on medium speed until well blended; add additional ingredients; mix well.

  • 4.

    Pour mixture into prepared pastry shell.

  • 5.

    Bake at 400° F for 35–40 minutes or until knife inserted into center comes out clean.

  • 6.

    Cool on wire rack.

  • 7.

    Top with whipped topping, if desired.

  • 8.

    Store leftover in sealed container.

Rated 5 out of 5 by from Scrumptious Pumpkin Pie! Many pumpkin pie recipes I've tried with a sweetener, other than sugar, didn't really give the true taste of pumpkin pie. This recipe even had my husband complimenting the difference in the one I'd used previously. Of course, Truvia made all the difference in the flavor. Thank you for Truvia! Using Organic Wheat Flour, Organic Pumpkin and Vanilla, what a joy the finished product was. I made two pies and this recipe will now be a yearly treat. Rated 5 out of 5 by from great food--easy to make This is an excellent way to eat a vegetable. Skim milk and eggs make a great breakfast. I made without any crust--that makes it a delicious food for any high nutrition/ low calorie diet. No aftertaste to sweetner.
