Zanna's Pumpkin Pancakes Recipe

Ever thought of taking your pancakes to the pumpkin patch? These fluffy marvels are a weekend treat the whole family will crave, and have 5% fewer calories* and 57% less sugar* than the full-sugar version. Makes 16 pancakes (8 servings).

Ingredients

  • 2 cups all-purpose flour

  • 1 Tbsp + 12 tsp of zero-calorie Truvia® Natural Sweetener Spoonable*

  • 1 Tbsp baking powder

  • 1 tsp pumpkin pie spice**

  • 14 tsp salt

  • 2 large eggs

  • 134 cup skim milk

  • 3 Tbsp canola oil

  • 12 cup pumpkin puree

*or 4 packets of zero-calorie Truvia® Natural Sweetener
**pumpkin pie spice may be substituted with: 12 ground cinamon 14 ground ginger, 18 tsp ground nutmeg, and a pinch of allspice.

Directions

  • 1.

    Assemble all ingredients.

  • 2.

    Combine dry ingredients in large mixing bowl.

  • 3.

    In separate bowl, combine eggs, milk, oil and pumpkin; mix.

  • 4.

    Add pumpkin mixture to dry ingredients and mix until large lumps disappear.

  • 5.

    Heat non-stick skillet over medium heat until a drop of water skitters around pan; Pour 14cup batter for each pancake onto hot skillet.

  • 6.

    Cook 1 or 112 minute until bubbly and turn; cook on other side until golden brown.

  • 7.

    Serve with a spoonful of hot applesauce or traditional maple syrup.

*These pancakes have 180 calories and 3 grams of sugar per serving compared to the full-sugar version which have 190 calories and 7 grams of sugar per serving.
