Ingredients

  • 2 c. old-fashioned rolled oats

  • 2 tsp. baking powder

  • 1 12 tsp. pumpkin pie spice, divided

  • 1 tsp. Kosher salt

  • 1 c. preferred milk

  • 23 c. pumpkin puree

  • 4 large eggs*

  • 12 c. plus 1 tbsp. Truvia Sweet Complete Brown Sweetener with a Hint of Molasses, divided

  • 2 tsp. pure vanilla extract

  • 2 tbsp. hulled pumpkin seeds, for topping

*Please remember to wash hands, utensils, equipment, and work surfaces with hot, soapy water before and after they come in contact with raw egg.

Directions

  • 1.

    Preheat oven to 350º. Butter an 8” or 9” square baking dish.

  • 2.

    Add oats to a blender and process into a fine powder. Add baking powder, 1 teaspoon pumpkin pie spice, salt, milk, pumpkin, eggs, ½ cup sweetener, and vanilla. Blend until smooth, about 1 minute.

  • 3.

    Transfer batter to prepared baking dish. In a small bowl, mix together pumpkin seeds and remaining pumpkin pie spice and sweetener. Sprinkle over the surface of the batter.

  • 4.

    Bake until golden and a toothpick inserted in the middle comes out clean, 50 minutes to 1 hour.
