Classic Corn Bread Recipe

A simple corn bread recipe that you can use for any meal. This recipe contains 17% fewer calories and 70% less sugar* than the full-sugar version. Makes 8 2x4 pieces.

Ingredients

  • Cooking spray

  • 1 13 cup yellow cornmeal, degermed, enriched

  • 1 14 cup all-purpose flour

  • 14 cup Truvía® Cane Sugar Blend

  • 2 tsp baking powder

  • 12 tsp salt

  • 1 cup sweet corn, thawed if frozen

  • 23 cup milk

  • 14 cup vegetable oil

  • 1 large egg, beaten**

Directions

  • 1.

    Preheat oven to 400°F; Position rack in center of oven.

  • 2.

    Spray 8-inch square pan with cooking spray.

  • 3.

    In a large bowl, whisk together cornmeal, flour, Truvía® Cane Sugar Blend, baking powder and salt.

  • 4.

    Puree corn in food processor.

  • 5.

    Add pureed corn, oil and beaten egg to the flour mixture.

  • 6.

    Stir until blended.

  • 7.

    Bake until edges begin to pull away from pan sides and tester inserted into center comes out clean, about 15-20 minutes.

  • 8.

    Cool in pan on rack.

  • 9.

    Once cool, slice and enjoy.

  • 10.

    Store unused portion in sealed container.
