Ingredients
Pudding
3 large eggs, plus 1 yolk
6 oz. dark chocolate (60-65% cacao), chopped
2 Tbsp unsalted butter, softened
2 tsp vanilla extract
1 1⁄2 cups heavy cream
1⁄2 cup whole milk
1⁄3 cup Truvia Sweet Complete Granulated All-Purpose Monk Fruit Sweetener or Truvia Sweet Complete Granulated All-Purpose Stevia Leaf Sweetener
2 Tbsp unsweetened cocoa powder
2 Tbsp cornstarch
1 tsp salt
Topping
1 cup heavy cream
1⁄4 cup Truvia Sweet Complete Granulated All-Purpose Monk Fruit Sweetener
1 Tbsp vanilla extract
2 oz. shaved chocolate
Directions
Pudding
- 1.
Whisk together the cocoa powder, cornstarch, and 2 tablespoons of Sweet Complete Granulated Monk Fruit. Add the eggs and whisk to combine; set aside.
- 2.
In a medium pot, whisk together the milk, cream, and remaining 3 tablespoons of Sweet Complete Granulated Monk Fruit and bring to a boil. Let the mixture boil for 1 to 2 minutes, or just until it starts to thicken. Remove from heat.
- 3.
Pour 2 tablespoons of the hot mixture into the egg mixture while constantly stirring to prevent curdling. Whisk in additional 2 tablespoons to finish tempering the eggs. Repeat this step twice more.
- 4.
Pour the tempered mixture into the pot. Cook over low heat, constantly whisking, until the mixture just simmers. Remove from heat, and stir in the butter, chocolate, vanilla, and salt.
- 5.
Strain the mixture through a fine-mesh strainer. Pour pudding mixture into ramekins or heat-proof glasses. Cover with plastic wrap. Refrigerate for 4 hours or until firm.
Topping
- 6.
Add the heavy cream, vanilla extract, and Sweet Complete Granulated Monk Fruit it to a cold bowl.
- 7.
Using a handheld mixer or whisk by hand, beat until soft peaks form, about 2 to 3 minutes with the mixer and 4 to 5 minutes by hand.
- 8.
Remove pudding cups from the refrigerator and top with whipped cream and shaved chocolate.
