Classic Cheesecake Recipe with Truvía® Natural Sweetener

Ingredients

Crust
*or 5 packets of zero-calorie Truvía® Natural Sweetener
Filling
  • 1 lb. (2 cups) cream cheese

  • 8 oz. (1 cup) Neufchâtel cheese

  • 4 eggs

  • 1 Tbsp fresh lemon zest

  • 4 Tbsp fresh lemon juice

  • 18 tsp salt

  • 13 cup + 112 tsp of zero-calorie Truvía® Natural Sweetener Spoonable

Note: For best results, use room-temperature lemons, cream cheese and Neufchâtel cheese

Directions

  1. Assemble all ingredients.

  2. Place graham cracker crumbs and Truvía® Natural Sweetener (crust)into mixing bowl; mix well.

  3. Pour melted butter and vanilla over crumb mixture; blend until mixture is moist.

  4. Press crumb mixture into 10" ungreased springform pan, covering bottom and sides; refrigerate for 10 minutes.

  5. Place Truvía® Natural Sweetener (filling), cream cheese, Neufchâtel and salt into mixing bowl.

  6. Blend at low speed for 1 minute; scrape sides of bowl and mixing paddle.

  7. Mixing at low speed, add 1 egg at a time over 5 minutes.

  8. Scrape sides of bowl and paddles.

  9. Mix at medium speed for 2 minutes while adding lemon zest and juice; scrape bowl and mixing paddle.

  10. Pour batter into graham cracker crust; bake at 325° F in oven for 55–60 minutes.

  11. Remove from oven; cool on wire rack for 1 hour. Cut into 12 pieces using a water-dipped serrated knife and serve or refrigerate.

*This cheesecake has 270 calories and 4 grams of sugar per serving as compared to 310 calories and 20 grams of sugar per serving in the full-sugar version.

Rated 5 out of 5 by from Cheesecake This cheesecake recipe makes a delectable, creamy, intensely lemon, thick, yet smooth cheesecake. The instructions were extremely clear and easy to follow, even for a baker with little experience. The use of the Truvia sweetener instead of traditional granulated sugar, resulted in no loss of sweetness, or difference in flavor. For those desiring a less notable lemon accent, my recommendation is to substitute 1 teaspoon lemon extract for the lemon juice, or alternatively, add 1 teaspoon more Truvia sweetener. Also, you could elevate this recipe a notch by adding a sour cream topping by mixing 1-2 teaspoons Truvia sweetener with 1 pint reduced fat sour cream, and 1 tablespoon lemon zest or 1/2 teaspoon vanilla extract. Spread the mixture evenly over the top of the cheesecake in the last 15-20 minutes of baking.

Rated 4 out of 5 by from Cut back on the lemon I made this cheesecake for a party and nobody could tell it wasn't sweetened with sugar. It got eaten all up. I do suggest cutting back on the lemon juice (I saw that someone else has commented about that as well). Seriously make this. Oh yeah, and you can use all reduced fat cream cheese (that's what I did and it turned out great).

Rated 5 out of 5 by from Could not Believe it! I tried the Cheesecake and thought it was better with Truvia than sugar. Normally when I eat cheesecake, while I love the taste I always found it heavy in my stomach. But with Truivia quite the opposite occurred. The cake itself looked superb. The taste was heavenly and I did not feel like there was a big lump in my stomach.

Rated 4 out of 5 by from Very Good! I loved the cheesecake I subbed the 2 packages of full fat cream cheese with Neufchâtel cheese and it was great! One thing I would Note is that the lemon juice is a little strong and I only used 2 tbsp so I might even only use one tbsp next time unless you like a really strong lemon flavor. But over all it was really good!

Rated 5 out of 5 by from Great taste...no one knew it wasn't sugar !!!! I've been using Truvia since it came onto the market. I have made cheesecakes many times with Truvia and served them at events and everyone loved them. I tell people after they eat it that it's made with Truvia and how much better it is for them than sugar. The cheesecakes always turn out great! Love Truvia.
