Classic Cheesecake Recipe

A delightfully smooth and creamy cake with a reduced-sugar twist. This version of the classic has 34% fewer calories* and 81% less sugar than the full-sugar version.

Note: For best results, use room-temperature lemons, cream cheese and Neufchâtel cheese.


  • 1.

    Assemble all ingredients.

  • 2.

    Place graham cracker crumbs and Truvia Sweet Complete® Granulated All-Purpose Sweetener (for crust) into mixing bowl; mix well.

  • 3.

    Pour melted butter and vanilla over crumb mixture; blend until mixture is moist.

  • 4.

    Press crumb mixture into 10" ungreased springform pan, covering bottom and sides; refrigerate for 10 minutes.

  • 5.

    Place Truvia Sweet Complete® Granulated All-Purpose Sweetener (for filling), cream cheese, Neufchâtel and salt into mixing bowl.

  • 6.

    Blend at low speed for 1 minute; scrape sides of bowl and mixing paddle.

  • 7.

    Mixing at low speed, add 1 egg at a time over 5 minutes.

  • 8.

    Scrape sides of bowl and paddles.

  • 9.

    Mix at medium speed for 2 minutes while adding lemon zest and juice; scrape bowl and mixing paddle.

  • 10.

    Pour batter into graham cracker crust; bake at 325° F in oven for 60–75 minutes.

  • 11.

    Remove from oven; cool on wire rack for 1 hour.

  • 12.

    Cut into 12 pieces using a water-dipped serrated knife and serve or refrigerate.

*This cheesecake has 190 calories and 5 grams of sugar per serving as compared to 290 calories and 27 grams of sugar per serving in the full-sugar version.

Rated 5 out of 5 by from Super Recipe! My husband is diabetic and I haven't done a lot of baking for the last few years but with the easy graham cracker crust I decided to dive in. Amazing! I used all low fat cream cheese and it still was yummy with a nice strong lemon flavor.

Rated 1 out of 5 by from Bla.h.h.h.h.h Down loaded this recipe a couple of weeks ago there were typos on your end in the measurements but even considering this I plan on trashing the whole thing including the recipe and all. Could tell it had cheeses, could tell it had graham crackers, but couldn't taste the truvia except where it offset the lemon.
