These caramel cheesecake bites taste truly decadent. Created by Baking Star contest judge April Athena of CookWithApril, these bars have 34% less sugar* per serving than the regular sugar-sweetened version. Makes 24 pieces (approximately 2-inch squares).
Preheat oven to 350° F. Combine graham cracker crumbs, Truvia Cane Sugar Blend, and melted butter in a medium bowl. Press crumb mixture firmly into a foiled 9” x 13” pan. Bake crust at 350° F for 10 minutes.

In a separate bowl, combine softened cream cheese, Truvia Brown Sugar Blend, and flour with a hand mixer. Next, add sour cream and vanilla extract and continue mixing. Finally, mix in eggs.

Heat caramels and water in microwave for 30 seconds until melted. Pour about 3⁄4 of the caramel sauce into cheesecake batter and mix. Pour batter onto crust.
4.
Bake at 350° F for 40 minutes.

Cut cooled bars into 24 (approximately 2” square) bites. Store refrigerated.
6.
Top bites with chopped walnuts and drizzle with remaining caramel sauce before serving.
*These bars have 320 calories and 17 grams of sugar per serving compared to the full-sugar version which have 340 calories and 26 grams of sugar per serving.

Caramel Cheesecake BitesI wanted a dessert for a family gathering and one that would be easy to make. The instructions were very detailed and this was very easy to make. This dessert was the most popular one out of all of the desserts at the gathering. Everyone has seconds and some even had 3 pieces.

Caramel Cheesecake BitesOne of the things I love is baking, and being able to replace Truvia in my recipes is wonderful. And Cheesecake is a favorite among many of my friends and family. I didn't say anything when I served these as dessert after a small dinner party. No one even knew they were made with Truvia instead of regular sugar. I'll be making this one again and often.

Delicious Easter DessertI saw this recipe and decided to try it for our family Easter reunion. I was so amazed that the dessert finished before the main plates lol. Everyone loved them and they made me promised that I will do it again for the 4th of july. I decorated them with tiny bunnies from the bakery next door and I'm planning to decorate them with tiny flags for the 4th of july. One other thing, my mother and my aunt were able to eat them, they are diabetics and usually have to miss the desserts.

Cheesecake-aholic!I am a cheesecake-oholic! I love everything cheesecake, and add in caramel - oh my! I was worried that not using regular cane sugar would change the taste of this long loved recipe, but I found it actually made it better! I tasted more of the other flavors using Truvia than I usually do using regular sugar. I found the flavors to be more prevalent and crisp. I loved it and will start trying it in my other favorite recipes!
