Ingredients

  • 34 cup roasted, unsalted nuts

  • 34 cup whole wheat flour

  • 3 tsp of zero-calorie Truvia Original Calorie-Free Sweetener Spoonable Jar***

  • 12 tsp kosher salt

  • 6 Tbsp cold unsalted butter, cut into 12-inch cubes

  • 2 egg whites

  • 2 Spanish or Vidalia onions, peeled and cut into wedges

  • 1 red onion, peeled and cut into wedges

  • 2 Tbsp balsamic vinegar

  • 1 tsp olive oil

  • 1 cup fat-free ricotta

  • 2 eggs, beaten

  • 14 tsp kosher salt

  • 14 tsp black pepper

  • 1 Tbsp fresh thyme

Directions

    Preheat oven to 400° F.

    In a food processor, pulse nuts until coarsely chopped. Add flour, Truvía Original Sweetener and salt and pulse to combine. Add butter and pulse until the mixture resembles a coarse meal. Add egg whites and pulse just until dough comes together and forms a ball. Add a tablespoon of ice water if mixture needs more liquid to come together. Press dough with wet hands into a 9-inch tart pan with removable bottom into an even layer and up the sides. Refrigerate for 1 hour.

    On a sheet pan, combine onions, balsamic, oil and 134 tsp Truvía Original Sweetener (or 2 packets) and toss to coat. Roast for 20 minutes, turning onions over halfway.

    In a small bowl combine ricotta, egg, salt, pepper and 34 tsp Truvía Original Sweetener (or 1 packet) and stir. Evenly spread filling on bottom of the tart shell. Carefully arrange roasted onions in a rosette pattern, saving the smaller pieces for the middle. Sprinkle with thyme and bake for 20–25 minutes or until crust is golden and filling is set.

    Let cool 10 minutes before cutting into wedges.

Rated 5 out of 5 by from OMG LOVE IT ! Never in a million years did I think I would like - much less love - this dish! My mom would be amazed that I actually like something with onion in the title. But I made it for my partner and the young adults in the house and they all loved it. I finally gave in and took a taste and I now have a new favorite favorite food. The Truvia gives it just the right amount of 'sweet' to make the dish work. Try it - you will be amazed!
