Oatmeal Breakfast Cookies Recipe

Ingredients
2 large, very ripe bananas, peeled
1⁄2 cup creamy almond butter
1 Tbsp coconut oil
3 Tbsp Truvia Brown Sugar Blend
1 Tbsp of water
1 tsp. vanilla extract
2 cups oats
¼ cup almond flour
½ cup pumpkin seeds (pepitas)
1 teaspoon baking powder
¼ teaspoon ground cinnamon
¼ teaspoon salt
¼ cup dried blueberries
¼ cup craisins
¼ cup dried cherries
Directions

Preheat oven to 350° F.

In a large bowl, mash the ripe bananas with a fork.

Stir in the almond butter, coconut oil, Truvia Brown Sugar Blend, water and vanilla extract. Mix until smooth.

In a separate medium bowl, stir together the almond flour, oats, pumpkin seeds, baking powder, cinnamon, and salt.
- 5.
Add the dry ingredients to the wet ingredients and stir until combined.
- 6.
Stir in the dried blueberries, craisins and dried cherries.
- 7.
Drop dough by the spoonful onto the prepared baking sheet.
- 8.
Grease the bottom of a cup and use that to press down cookies.
- 9.
Bake for 12-14 minutes or until cookies are done.
- 10.
Let cool on the baking sheet for two minutes. Transfer to a wire cooling rack and cool completely.

Store in an airtight container.
