Ingredients
Lemon Poppyseed Cobb Salad
⅓ cup fresh lemon juice, washed before juicing
2 tablespoons apple cider vinegar
3 tablespoons Truvia® Stevia Sweetener Jar
1 tablespoon poppy seeds
½ teaspoon kosher salt
¼ teaspoon black pepper, plus more for garnish
½ cup extra-virgin olive oil
6 cups mixed spring greens, washed
2 cups cooked grilled chicken breast, diced or sliced
6 slices bacon, cooked until crisp and chopped
1 cup cherry tomatoes, washed and halved
4 hard boiled eggs, peeled and halved or chopped
1 large avocado, washed, peeled, pitted and diced
⅓ cup crumbled feta cheese
Chopped fresh chives, for garnish
Directions

Whisk together lemon juice, lemon zest, apple cider vinegar, Truvia® Stevia Sweetener, Dijon mustard, poppy seeds, kosher salt and pepper. Slowly drizzle in olive oil while whisking vigorously until mixture is emulsified and smooth. Refrigerate until ready to use.

Arrange mixed greens on a large serving platter or divide among four bowls. Neatly arrangechicken, bacon, tomatoes, hard-boiled eggs, avocado and feta in rows or clusters over greens.

Garnish with chives and drizzle with lemon poppyseed dressing. Finish with an additional sprinkle of freshly cracked black pepper.
