Topping

Cake

  • ⅔ cup softened butter

  • 1 cup Truvia Cane Sugar Blend

  • 2 cups light sour cream

  • 4 eggs**

  • 1 Tbsp vanilla extract

  • 2 cups flour

  • ¼ teaspoon baking soda

Directions

  • 1.

Preheat oven to 325° F. Grease and lightly flour a 12-cup bundt pan.

  • 2.

In a medium bowl mix flour, Truvia Brown Sugar Blend, and cinnamon. Add the chunks of butter and cut in using a pastry blender or two knives until it resembles coarse crumbs. Stir in the pecans and set aside.

  • 3.

In a large bowl, beat softened butter, Truvia Cane Sugar Blend, and light sour cream until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla. Gradually stir in the flour and baking soda on low speed until mixed.

  • 4.

Spread half of the streusel topping evenly into the bundt pan, then spoon half the batter over the streusel topping. Spread the rest of the streusel topping evenly over the batter, then spoon the rest of the batter over top the second layer of streusel topping.

  • 5.

Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then turn cake out of pan onto a wire rack to cool completely.

Rated 3 out of 5 by from 220 Calories per Servings? Careful.... I calculated the calories for all of the ingredients, and it goes way beyond the 220 per serving that this recipes claims. I would need to cut out all of the pecans, substitute 2/3 cup applesauce in place of some butter, and go with a fat free sour cream in order to meet the the calories per serving as listed. It sounds delicious and I will make this recipe trying some of the adjustments. Perhaps someone from Truvia can validate how they arrived at the calories listed. If you're like me, all calories count. That's the reason behind using Truvia to begin with. Just don't want people to be deceived if in fact there is an error in the calorie calculation.

Rated 5 out of 5 by from Tasty morning coffee snack I have had Cinnamon Streusel Coffee Cake with sugar as well as with Truvia and I must say it is soo good either way. Now I want to go make one with Truvia just so I do not have to worry about soo many calories. I need something tasty to get me going with my coffee in the mornings and this is perfect! I'll rack some calories up with certain traditional foods this Thanksgiving but Truvia will also be surprising my guests in a healthy tasty way through desserts. Also I'm ready to do my Truvia brown sugar blend for Christmas with my glazed ham :)

Rated 4 out of 5 by from Cinnamon Streusel Coffee Cake I switched the baking soda to baking powder (I thought all cakes had baking powder in them), and I found that there was so much filling in the middle that it baked like it was two separate cakes. It was also quite dense. Did anyone else have that problem? Perhaps I did something wrong? The flavor was very good.

Rated 5 out of 5 by from Yummy! I had Bob Evans struesel coffee cake last week, which i think is very good. I decided to try this recipe using the Truvia to save some sugar calories. It is better than the Bob Evans! I am so excited that this recipe is great and I can indulge in a little more of one of my favorite goodies!
