Acorn Squash Recipe

Baked with a little butter and Truvía® Brown Sugar Blend, this acorn squash recipe is a wonderfully easy side dish to help welcome in the cooler days of autumn. This recipe with Truvía® Brown Sugar Blend has 20% fewer calories* and 50% less sugar* of the traditional brown sugar-sweetened version. Makes 4 servings.

  • 1.

    Preheat oven to 350°F.

  • 2.

    Cut squash in half lengthwise and scoop out the seeds.

  • 3.

    Cut a thin slice off the rounded back of each half so they will sit upright on a pan.

  • 4.

    Place the squash on a baking sheet and place half of the butter and Truvía® Brown Sugar Blend in the scooped out cavity of each half of the squash.

  • 5.

    Bake for 45-60 minutes until tender when pierced with a fork.

*This acorn squash has 40 calories and 3 grams of sugar per serving compared to sugar-sweetened acorn squash which has 50 calories and 6 grams of sugar.

As a self taught chef/foodie and someone who teachers others how to cook vegetables (I volunteer in a food bank and a lot of the clients have never eaten or tried some of the vegetables we give out) that they would not ordinarily eat, this recipe is something I would definitely pass on.

Rated 5 out of 5 by from Love this... I tried this recipe but made mine in the microwave....just poke holes in squash then cook in microwave for about 6 minutes longer if needed....then cut in half, scoop out seeds, and the trivia brown sugar and I used spray butter for less calories....delicious

Rated 4 out of 5 by from YUM !!!! I usually fill my squash with unsweetened applesauce and bake, but this adds a nice buttery flavor that compliments the squash wonderfully. My son loves it and i can know that he is getting his vegetables......he even asks for more! Win win!

Rated 5 out of 5 by from Acorn Squash Awesome recipe. I sometimes use a pinch of sea salt, cinnamon, and the baking blend or packets if I don't have the baking blend. Eat as a treat and sometimes as desert or for breakfast.
