Sweet Potato Casserole Recipe with Truvía® Brown Sugar Blend and Truvía® Cane Sugar Blend

Ingredients

Filling
  • 6 cups cubed sweet potatoes

  • 12 cup Truvía® Cane Sugar Blend

  • 12 tea salt

  • 1 tea vanilla

  • 2 eggs

  • 14 cup butter

Topping
  • 12 cup Truvía® Brown Sugar Blend

  • 13 cup flour

  • 12 cup chopped pecans

  • 18 cup melted butter

Directions

  1. Preheat oven to 350º F and spray a 9x13 baking dish with cooking spray.

  2. Bring 2 quarts of water to a boil in a large pot over medium heat.

  3. Once the water is boiling, add sweet potatoes cubes and cover.

  4. Allow the potatoes to boil until tender, about 30 minutes.

  6. Add butter, Truvía® Cane Sugar Blend, salt, vanilla and mix well.

  7. Whisk eggs in a small bowl, than gradually add to mashed sweet potatoes.

  8. Pour mixture into prepared dish.

  9. For topping, combine all the ingredients in a mixing bowl.

  10. Sprinkle the topping evenly over the top on the sweet potato mixture to make a nice crust.

  11. Bake for 30 minutes.

  12. Allow to set at least 10 minutes before serving.

  13. Cover and refrigerate any leftovers
