Ingredients
Mediterranean-Style Grain Bowl
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
½ teaspoon Truvia® Stevia Sweetener Jar
½ teaspoon mustard
1 teaspoon kosher salt
½ teaspoon black pepper
3 cups quinoa, cooked and cooled
1 cup English cucumber, washed and diced
½ cup Kalamata olives, pitted and sliced
½ cup feta cheese, crumbled, for garnish
1 tablespoon chopped fresh parsley, for garnish
Directions

Whisk together lemon juice, Truvia® Stevia Sweetener Jar, mustard, kosher salt and pepper until combined. Gradually stream in olive oil while whisking constantly until mixture is smooth and emulsified.

Pour half of the dressing over the quinoa in a medium bowl and toss gently to coat.

Pour remaining dressing over cherry tomatoes, cucumber and olives in a separate medium bowl and toss to combine.
- 4.
Divide quinoa and vegetables evenly among serving bowls. Garnish each bowl with feta, parsley and mint. Serve immediately, or chill for 30 minutes before serving.
