Combine eggs, almond milk, lemon juice, lemon zest, poppy seeds, and Truvia® Sweet Complete Sweetener in a large bowl. Whisk until smooth.

Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray.

Dip each slice of bread into egg mixture, letting it soak for a few seconds on each side.

Place soaked bread slices onto skillet in a single layer and cook until golden brown, about 2-3 minutes per side.

Transfer to serving plate and top with a dollop of sugar-free whipped topping. Garnish with additional lemon zest and serve.
