Ingredients

Lemon Poppy Seed French Toast

  • 2 large eggs

  • ⅓ cup unsweetened almond milk

  • 1 tablespoon fresh lemon juice, washed before juicing

  • Zest of 1 washed lemon, plus more for garnish

  • 1 tablespoon poppy seeds

  • 2 teaspoons Truvia® Sweet Complete Sweetener

  • 4 slices challah bread, cut 1-inch thick

  • Sugar-free whipped topping, for serving

Directions

    Combine eggs, almond milk, lemon juice, lemon zest, poppy seeds, and Truvia® Sweet Complete Sweetener in a large bowl. Whisk until smooth.

    Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray.

  • 3.

    Dip each slice of bread into egg mixture, letting it soak for a few seconds on each side.

  • 4.

    Place soaked bread slices onto skillet in a single layer and cook until golden brown, about 2-3 minutes per side.

  • 5.

    Transfer to serving plate and top with a dollop of sugar-free whipped topping. Garnish with additional lemon zest and serve.
