Lemon Poppy Seed Cookies Recipe with Truvía® Nectar and Truvía® Cane Sugar Blend

  • 3 12 cups all-purpose flour

  • 2 tsp baking powder

  • 14 cup poppy seeds

  • 34 cup butter, softened

  • 13 cup Truvía® Nectar

  • 12 cup Truvía® Cane Sugar Blend

  • 2 eggs

  • 12 cup greek yogurt

  • 1 tsp lemon extract

Lemon Topping
  • 12 cup Truvía® Nectar

  • 14 cup lemon juice

  • 2 tsp cornstarch

  • 34 tsp lemon extract


  1. Preheat oven to 350ºF. Lightly grease baking sheets or line with parchment.

  2. In a small bowl, combine flour, baking powder and poppy seeds.

  3. In a large mixing bowl , cream together butter, Truvía® Nectar and Truvía® Cane Sugar Blend until smooth

  4. Add eggs, one at a time, beating well after each addition.

  5. Stir in yogurt and lemon extract.

  6. Gradually beat in flour mixture.

  7. Drop by rounded tablespoon onto lightly greased or parchment lined baking sheets.

  8. Bake for 10-12 minutes, or until edges begin to brown.

  9. Let cool on wire rack.

Lemon Topping
  1. In a small sauce pan on medium heat, combine Truvía® Nectar, lemon juice and cornstarch.

  2. Bring to a boil (about 5 minutes).

  3. Cool for 20 minutes

  4. Add lemon extract to cooled syrup

  5. Transfer topping into a plastic bag, snip corner and drizzle or pipe onto cooled cookies.

*Each cookie has 100 calories and 7 grams of sugar per serving compared to the full-sugar version which has 120 calories and 16 grams of sugar per serving.
