Ingredients
Carrot Ribbon Salad
4 large carrots, washed and peeled
1 teaspoon Truvia® Stevia Sweetener Jar
2 tablespoons extra-virgin olive oil
⅓ cup sliced almonds, toasted, for garnish
¼ cup feta cheese, crumbled, for garnish
Chopped fresh dill, for garnish
Directions
- 1.
Shave carrots lengthwise into long ribbons, using a vegetable peeler or mandoline, and place in a large serving bowl.
- 2.
Whisk together 2 tablespoons of orange juice, orange zest, mustard, Truvia® Stevia Sweetener, salt and pepper. Slowly drizzle in olive oil, whisking vigorously until smooth and dressing is emulsified.
- 3.
Pour dressing over carrot ribbons and gently toss to coat. Garnish with almonds, feta, and dill, and serve.
