Blueberry Muffins Recipe with Truvía® Cane Sugar Blend

Ingredients

  • 112 cups all-purpose flour

  • 1 Tbsp baking powder

  • 12 cup Truvía® Cane Sugar Blend

  • 14 tsp salt

  • 1 cup skim milk

  • 1 large egg

  • 13 cup canola oil

  • 12 tsp vanilla extract

  • 34 cup blueberries; fresh or frozen

Directions

  1. Assemble all ingredients; preheat oven to 400°F.

  2. Combine flour, baking powder, Truvía® Cane Sugar Blend and salt in a medium bowl.

  3. Combine milk, egg, oil and vanilla in a large bowl. Mix until well combined.

  4. Add dry ingredients to egg mixture. Mix until just combined. Do not over mix.

  5. Fold in blueberries.

  6. Divide batter into twelve 212inch paper-lined muffin cups.

  7. Bake for 18–22 minutes until tops are lightly browned.

*This muffin has 160 calories and 7 grams of sugar per serving, compared to the full-sugar version that has 190 calories and 19 grams of sugar per serving.

Rated 5 out of 5 by from YUMMY YUMMY Blueberry Muffins I tried this...it is marvelous! Great to use less sugar, but I tried it with no sugar...and it was great...less sweet, but still yummy!!! I have tried Truvia in many recipes...all with same result...I now prefer them with NO suagr and want the Truvia...I have tried other sweeteners...but the taste was bitter...not with Truvia!! My son got me started on it and I am so grateful...LOVE LOVE LOVE IT!!!

Rated 4 out of 5 by from Good for healthy muffins These are good muffins, especially for being healthy. The only problem is the day after I made them they tasted stale and dry. The taste is great though and you don't notice the truvia aftertaste. I do think they are better than some of the box mixes I've made just wish they were more moist.

Rated 5 out of 5 by from Great muffins!! My husband loves blueberry muffins. Since being diagnosed with diabetes I’ve been trying to find ways to satisfy his sweet tooth while managing his diabetes. Truvia is a great product and we are so thankful. I’d put these muffins up against any other recipe. They are wonderful!

Rated 5 out of 5 by from Yummy Blueberry Muffins! I tried Truvia for the first time last month and I'm so glad I did! Of all the sweeteners I have tried, this is the best. I am trying to replace all the sugar in my family's diet and even with no sugar at all, my kids even loved the muffins! Now that's saying something!

Rated 5 out of 5 by from A great, not so sweet, muffin! I usually find muffins too sweet, especially in the morning. This recipe makes it so much nicer to enjoy a muffin without all that sugar. It was easy to make and tastes great. I might add more blueberries, though, and would probably spread a little butter on it.
