Peanut Butter Cup Bars
For crust:
3 tablespoons Truvia® Sweet Complete Granulated Sweetener
¼ teaspoon kosher salt
For filling:
½ cup creamy peanut butter or almond butter
3 tablespoons Truvia® Sweet Complete Granulated Sweetener
2 tablespoons unsalted butter, melted
¼ teaspoon pure vanilla extract
For topping:
1 cup sugar-free dark chocolate chips
1 tablespoon coconut oil
Directions

Preheat the oven to 350°F. Line an 8x8-inch baking pan with parchment paper, leaving an overhang on two sides for easy lifting.

For crust: Combine melted butter, Truvia® Sweet Complete Granulated Sweetener and vanilla in a large bowl.
- 3.
Add flour and salt, mixing until a soft dough forms. Press mixture into the bottom of prepared pan in an even layer.

Bake crust until lightly golden-brown, about 12-15 minutes. Remove from oven and set aside to cool completely.
- 5.
For filling: Combine peanut butter, Truvia® Sweet Complete Granulated Sweetener, melted butter and vanilla until smooth. Spread mixture evenly over cooled crust. Refrigerate for 5 minutes.

For topping: Melt chocolate chips and coconut oil in a microwave-safe bowl in 20-second intervals, stirring between each, until fully melted. Pour melted chocolate over the peanut butter layer, smoothing the top.
- 7.
Refrigerate bars until fully set, at least 1 hour, or overnight. Remove from pan and cut into about 20 bite-sized squares, and serve.
