Ingredients
Lemon Bars
1½ cups sugar-free vanilla cookie crumbs, or almond meal
½ cup unsalted butter, melted, divided
1 tablespoon cornstarch
4 large eggs
2 large egg yolks
Confectioner's sugar, optional, for garnish
Directions

Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving overhang on sides for easy removal.

Combine cookie crumbs, ¼ cup of Truvia® Sweet Complete® Granulated Sweetener, ¼ cup of butter and salt in a medium bowl. Mix well until evenly combined and press mixture firmly into bottom of prepared pan.

Bake until lightly golden-brown and set, about 10-12 minutes. Remove from oven and set aside to cool.
- 4.
Whisk together 1 cup of lemon juice, lemon zest, cornstarch, eggs and egg yolks in a small saucepan over low heat. Cook, whisking constantly, until mixture bubbles and thickens enough to coat the back of a spoon and reaches about 170°F, about 5-6 minutes.

Remove from heat and add remaining ¾ cup of Truvia® Sweet Complete® Granulated Sweetener and remaining ¼ cup of butter, and whisk until completely smooth.
- 6.
Strain mixture through fine mesh sieve and over baked crust. Smooth into an even layer and bake until set but still slightly jiggly, about 20-25 minutes.
- 7.
Cool bars completely at room temperature, then refrigerate for at least 2 hours. Garnish with a dusting of confectioner’s sugar before slicing and serving.
- 8.
Optional: Top with a dusting of Truvia® Sweet Complete® Confectioners Sweetener.
