Ingredients

Bread

  • 1 ½ cups all-purpose flour

  • ½ tsp baking powder

  • 1 tsp baking soda

  • 14 tsp salt

  • ½ cup unsalted butter, softened

  • 34 cup Truvia Sweet Complete Granulated All-Purpose Sweetener

  • 2 eggs **

  • 1 12 tsp vanilla extract

  • 2 Tbsp lemon juice

  • 1 Tbsp grated lemon zest- from washed and dried lemon

  • 12 cup reduced-fat sour cream

Directions

Bread
  • 1.

    Preheat oven to 350 degrees.

  • 2.

    Grease and flour a 9x5 inch loaf pan or line it with parchment paper.

  • 3.

    In a medium sized bowl, sift together flour, baking powder, baking soda and salt, set aside. (drymixture)

    In a mixing bowl, add the butter and Truvia Sweet Complete Granulated All-Purpose Sweetener and then beat for 2-3 minutes until creamy Try to get it as fluffy as possible. (wet mixture)

  • 5.

    To the wet mixture add eggs one at a time, mixing in between and beat for 2 minutes or until fluffy.

  • 6.

    In a third bowl combine vanilla, lemon juice, zest, and sour cream and mix well (lemon mixture).

  • 7.

    Now add half the lemon mixture to the wet mixture and beat for 2-3 minutes. Add in half of the dry mixture, mix well.

  • 8.

    Add the rest of the lemon mixture, beat, then add the rest of the dry mixture until just mixed.

  • 9.

    Spread the batter evenly into loaf pan.

  • 10.

    Bake for 50-55 minutes or until golden brown.

  • 11.

    Remove from oven and let cool in pan.

Glaze
  • 12.

    In a small bowl whisk together the Truvia Sweet Complete Confectioners Sweetener lemon juice and half and half.

  • 13.

    Spread on top of cooled bread. (or place into sandwich bag, cut corner and drizzle the icing on the bread).

  • 14.

    Store in a sealed container.

Options (May Affect Nutritional Information)

  • Add 2 Tbsp of poppyseed to bread.
  • Add ½ cup of fresh raspberries or blueberries (washed and dried) to bread.
  • Top with 14 cup sliced almonds and use almond extract instead of vanilla in bread.
