Ingredients

Carrot Ribbon Salad

  • 4 large carrots, washed and peeled

  • 1 orange, washed, zested and juiced

  • 1 teaspoon Truvia® Stevia Sweetener Jar

  • 1 teaspoon Dijon mustard

  • ¼ teaspoon kosher salt

  • ¼ teaspoon black pepper, to taste

  • 2 tablespoons extra-virgin olive oil

  • ⅓ cup sliced almonds, toasted, for garnish

  • ¼ cup feta cheese, crumbled, for garnish

  • Chopped fresh dill, for garnish

Directions

  • 1.

    Shave carrots lengthwise into long ribbons, using a vegetable peeler or mandoline, and place in a large serving bowl.

  • 2.

    Whisk together 2 tablespoons of orange juice, orange zest, mustard, Truvia® Stevia Sweetener, salt and pepper. Slowly drizzle in olive oil, whisking vigorously until smooth and dressing is emulsified.

  • 3.

    Pour dressing over carrot ribbons and gently toss to coat. Garnish with almonds, feta, and dill, and serve.
