Ingredients
Brown Butter Pumpkin Chocolate Chip Blondies
½ cup unsalted butter
1 large egg plus 1 egg yolk
⅓ cup pumpkin puree
1 cup (120g) all-purpose flour
¼ teaspoon baking soda
¼ teaspoon kosher salt
½ cup sugar-free dark chocolate chips
Directions
- 1.
Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper, or lightly grease with cooking spray.
- 2.
Melt butter in a small saucepan over medium heat. Continue cooking, whisking constantly, until butter is golden-brown and smells nutty, about 4-5 minutes.
- 3.
Remove from heat and let cool slightly, about 5 minutes.
- 4.
Whisk together brown butter, Truvia® Sweet Complete® Granulated Sweetener and Truvia® Sweet Complete® Brown Sweetener in a large bowl until smooth. Add egg, yolk, vanilla and pumpkin puree, and beat until smooth.
- 5.
Whisk together flour, pumpkin pie spice, baking soda and kosher salt in a separate small bowl.
- 6.
Gradually fold dry ingredients into wet mixture until just combined.
- 7.
Stir in most of the chocolate chips, reserving about 1 tablespoon for topping. Spread batter evenly into prepared pan and top decoratively with reserved chocolate chips.
- 8.
Bake until a toothpick inserted into center comes out with a few moist crumbs, about 20-25 minutes. Cool completely in the pan before cutting into squares and serving.
- 9.
Note: **Remember to wash hands, utensils, equipment, and work surfaces with hot, soapy water before and after they come in contact with raw egg.
