Bourbon Candied Carrots Recipe

Bourbon Candied Carrots on a serving dish

This is a rustic looking side dish that has a good balance of earthy and sweet characters. It goes great on a spinach salad or would be a perfect accompaniment with grilled pork chops. Ingredients

  • 1 pound medium-sized carrots with green tops

  • 2 Tbsp unsalted butter

  • 1 tsp ground ginger

  • 2 Tbsp Truvia Brown Sugar Blend

  • 14 cup orange juice

  • 1 Tbsp bourbon

  • 14 tsp black pepper

  • 14 tsp coarse kosher salt

Directions

  • 1.

    Preheat oven to 400° F.

  • 2.

    Trim greens off carrots leaving about 1 inch at the top. Thoroughly rinse carrots under cold, running water removing any dirt. Pat carrots dry with paper towels and place on a rimmed baking sheet lined with aluminum foil.

  • 3.

    Melt butter for 1 minute in a small microwave-safe bowl.

  • 4.

    Remove bowl from microwave and add ginger, Truvia Brown Sugar Blend, orange juice, bourbon, and black pepper. Stir until sugar blend is completely dissolved. Pour over carrots and toss to coat.

  • 5.

    Bake for 35 minutes stirring halfway through.

  • 6.

    Remove from oven and sprinkle carrots with coarse kosher salt.

The carrots are very tasty. I serve them with grilled or roasted chicken. I like to find thinner carrots with stems, as they look very nice on the serving dish when entertaining.
