Ingredients

Blueberry Lemon Mint Mousse

  • ½ cup fresh blueberries, washed, plus more for garnish

  • 2 teaspoons fresh lemon juice, washed before juicing

  • 1 teaspoon lemon zest, washed before zesting, plus more for garnish

  • 6 fresh mint leaves, washed, plus more for garnish

  • 1 cup small curd cottage cheese, drained

  • ¼ cup Truvia® Stevia Sweetener Jar

  • ¼ cup sugar free whipped topping, plus more for topping, optional

Directions

  • 1.

    Combine blueberries, lemon juice, lemon zest, mint leaves, and Truvia® Stevia Sweetener in a blender and pulse, scraping down the sides as needed, until smooth.

  • 2.

    Add cottage cheese and puree until smooth and incorporated. Fold in whipped topping, if using.

  • 3.

    Divide mixture among serving glasses, cover and refrigerate for at least 2 hours until set, or until ready to serve. Garnish each serving with additional whipped topping, if using, blueberries, lemon zest, and mint leaves, and serve.
