Blueberry Lemon Mint Mousse
½ cup fresh blueberries, washed, plus more for garnish
1 teaspoon lemon zest, washed before zesting, plus more for garnish
¼ cup sugar free whipped topping, plus more for topping, optional
Directions

Combine blueberries, lemon juice, lemon zest, mint leaves, and Truvia® Stevia Sweetener in a blender and pulse, scraping down the sides as needed, until smooth.

Add cottage cheese and puree until smooth and incorporated. Fold in whipped topping, if using.
- 3.
Divide mixture among serving glasses, cover and refrigerate for at least 2 hours until set, or until ready to serve. Garnish each serving with additional whipped topping, if using, blueberries, lemon zest, and mint leaves, and serve.
