Ingredients
Vanilla Coconut Macaroons
3 cups unsweetened shredded coconut
¼ cup unsweetened vanilla protein powder
¼ cup Truvia® Cane Sugar Blend
½ teaspoon pure vanilla extract
¼ teaspoon kosher salt
Directions

Preheat oven to 325°F. Line a baking sheet with parchment paper and set aside.

Combine coconut, vanilla protein powder and Truvia® Cane Sugar Blend in a medium bowl.
- 3.
Beat egg whites and salt in a separate large bowl until stiff peaks form, about 3-5 minutes. Gently fold in vanilla extract and coconut mixture, being careful to not defl ate egg whites.
- 4.
Portion mixture into 1-2 tablespoon mounds using a spoon or cookie scoop, and place about 1 to 2 inches apart onto prepared cookie sheet.
- 5.
Bake until edges are golden-brown, about 15-17 minutes. Let cool completely on a wire rack and serve.
Optional (will affect nutritional information):
Dip or drizzle macaroons with melted dark chocolate.
