No Bake Pumpkin Cheesecake with Truvía® Nectar

Pumpkin season is here! We're celebrating by adding the fall favorite to a classic dessert for a little extra festive flair. Created by Chef Devin Alexander, this treat won't disappoint! And with 8% fewer calories* and 33% less sugar* than the full-sugar version, you might just decide to say "dessert first!"

Serving Size: one 4 oz. cup.

  • Servings: 12 (4 oz.) cups

Nutrition Per Serving


  • 2 graham crackers, preferably natural ones, crushed into crumbs

  • 8 oz block of Greek cream cheese

  • 1 cup canned pumpkin puree

  • 2 Tbsp Truvía® Nectar

  • 1 tsp pure vanilla extract

  • 12 tsp pumpkin pie spice

  • 12 tsp ground cinnamon

  • 14 cup "Truvía® Candied Pecans"

  • 2 cups thawed light whipped cream (plus extra for garnish)


  1. Divide the graham cracker crumbs evenly among 12 (4-ounce) shot glasses (or other 1/2-cup capacity cups), about 12 Tbsp crumbs in each. Set aside.

  2. Using an electric mixer, beat the cream cheese until smooth. Add the pumpkin, Truvía® Nectar, vanilla extract, pumpkin pie spice and cinnamon. Beat on low speed until smooth.

  3. Stir in whipped topping.

  4. Divide the mixture among the shot glasses, about 13 cup in each.

  5. Cover and refrigerate for 3 hours.

  6. When the cheesecakes are set, divide the pecans among them, about 1 tsp on each.

  7. Top each with a dollop of whipped topping.

  8. Serve immediately and enjoy!

* Each serving has 110 calories and 6 grams of sugar per serving compared to the full-sugar version that has 120 calories and 9 grams of sugar per serving.

There are no obscure ingredients that you will have to scour specialty stores to find, and it can be prepared on short notice, for unexpected guests. A very tasty and satisfying dish. I like to serve them in 2" or 3" mason jars, which makes for a bit more whimsical and unique presentation.
