Ingredients
No Bake Cannoli Pie
1 ½ cups crushed sugar-free vanilla cookies
¼ cup Truvia® Stevia Sweetener Jar, divided
1 ½ cups low-fat ricotta cheese
4 ounces low-fat cream cheese, softened
½ teaspoon pure vanilla extract
1 teaspoon washed orange zest, plus more for garnish
½ cup mini sugar-free chocolate chips, or chopped sugar-free dark chocolate
8 ounces sugar-free whipped topping, for topping
Directions
- 1.
Combine cookie crumbs, 2 tablespoons of Truvia® Stevia Sweetener Jar and butter in a small bowl.
- 2.
Press mixture firmly into bottom and up the sides of a 9-inch pie pan. Freeze crust until set, about 15-20 minutes.
- 3.
Meanwhile, combine ricotta, cream cheese, vanilla, orange zest, and remaining Truvia® Stevia Spoonable Jar in a large bowl.
- 4.
Beat until smooth and fluffy, about 3-5 minutes. Fold in mini chocolate chips.
- 5.
Transfer mixture to prepared crust and spread into an even layer. Top with sugar-free whipped topping.
- 6.
Refrigerate for at least 4 hours or until ready to serve. Garnish with additional orange zest and serve.
