Ingredients
Mini Berry Pink Pie Bites
1 ¼ cups all-purpose flour
½ cup unsalted butter, cold and cubed
2–3 tablespoons Truvia® Sweet Complete® Sweetener
1 teaspoon lemon juice
2 tablespoons Truvia® Confectioners Sweetener
2 teaspoons milk or water
Pink gel food coloring, for glaze
Sugar-free sprinkles, optional, for garnish
Directions

Whisk together flour and kosher salt in a large bowl. Add butter and cut in, using a pastry cutter or your fingers, until mixture resembles coarse crumbs.

Gradually add 3-4 tablespoons of cold water, 1 tablespoon at a time, mixing until dough just comes together. Pat dough into a flattened disc, and wrap tightly with plastic wrap. Chill dough for at least 30 minutes.

Meanwhile, combine raspberries and water in a small saucepan over medium heat, mashing as they cook, until slightly thickened, about 3-5 minutes. Add lemon juice and Truvia® Sweet Complete® Sweetener and cook until dissolved, an additional 2-3 minutes. Remove from heat and let cool completely.

Preheat oven to 375°F. Roll out chilled pie dough to about ¼-inch thickness. Cut dough into small, 3x3-inch squares. Place a small teaspoonful of cooled raspberry jam onto half of rectangles, leaving a small border around edges. Top with remaining rectangles and press edges with a fork to seal. Transfer to a baking sheet lined with parchment paper.

Bake until dough is golden-brown and puffed, about 12-15 minutes. Allow pie bites to cool for at least 10 minutes.

Meanwhile, combine Truvia® Confectioners Sweetener with milk to form a smooth glaze. Add a drop of pink food coloring, if desired. Spoon over cooled mini pie bites and top with sprinkles, if using. Let set at least 5 minutes before serving.
