Ingredients
Lime Mojito Gelatin Shots
1 cup water
6 tablespoons Truvia® Cane Sugar Blend Sweetener, divided
2 ½ teaspoons unflavored gelatin powder
8 chopped fresh mint leaves, washed, dried and finely minced
Directions

Carefully cut limes in half lengthwise and hollow out, reserving inner flesh in a separate bowl and leaving a stable shell. Juice reserved lime flesh and strain out any pulp using a fine mesh sieve. Reserve 1 cup of fresh lime juice.

Place hollowed-out lime shells cut-side-up in a small baking dish close to one another, or line the baking dish with a layer of salt to prevent any movement. Set aside.

Combine water and 4 tablespoons of Truvia® Cane Sugar Blend Sweetener in a small saucepan over medium-low heat. Bring mixture to a gentle simmer, stirring until fully dissolved, about 6 minutes. Remove from heat and sprinkle gelatin over warm mixture.

Let sit for 1-2 minutes, then whisk until gelatin is completely dissolved. Stir in 1 cup of reserved lime juice, rum, and chopped mint leaves. Let cool slightly at room temperature.

Pour gelatin mixture evenly into prepared lime halves. Cover loosely and refrigerate for at least 2-3 hours, or until fully set. Slice each lime half into 2 wedges

Place remaining Truvia® Cane Sugar Blend Sweetener in a small shallow plate and gently press each wedge into sweetener on both sides. Serve and enjoy.

Tip: Alternately, pour gelatin mixture into a lightly greased shallow pan. Refrigerate until set, then cut into cubes, or use cookie cutters for fun seasonal shapes.
