Ingredients
Coffee Cake Cookies
For dough:
1 3⁄4 cups (210g) all purpose flour
1⁄2 teaspoon kosher salt
1 teaspoon ground cinnamon
2 teaspoons instant espresso powder
1⁄2 cup unsalted butter, softened
1 large egg
1 teaspoon pure vanilla extract
For topping:
1⁄4 cup (30g) all purpose flour
2 tablespoons Sweet Complete® Brown Sweetener
1⁄4 teaspoon ground cinnamon
2 tablespoons cold unsalted butter, cubed
Directions
- 1.
For dough: Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
- 2.
Combine flour, baking powder, kosher salt, cinnamon and espresso powder in a small bowl.
- 3.
Cream together butter and Truvia® Sweet Complete® Sweetener in a separate large bowl until light and fluffy, about 3 minutes.
- 4.
Mix in egg and vanilla until smooth. Gradually mix dry ingredients into wet ingredients until combined. Cover and refrigerate dough at least 15 minutes or until chilled.
- 5.
For streusel topping: Combine flour, Sweet Complete® Brown Sweetener and cinnamon in a small bowl. Cut in butter using a fork or fingertips until mixture forms coarse crumbs.
- 6.
Scoop tablespoon-sized balls of dough onto prepared baking sheet about 2 inches apart.
- 7.
Gently press tops and sprinkle evenly with streusel.
- 8.
Bake until edges are set and tops are lightly golden, about 10-12 minutes.
- 9.
Cool on baking sheets at least 10 minutes before serving.
