Peanut Butter Cups
2 cups dark chocolate baking chips, no sugar added, 55% cacao
½ cup sugar-free peanut butter
2 tablespoons Truvia Sweet Complete® Granulated Sweetener
Directions
- 1.
Line a mini muffin pan with 12 mini paper liners.
- 2.
Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between each interval, until smooth.
- 3.
Spoon about 1 teaspoon of melted chocolate into each muffi n liner, using a spoon to spread it up sides slightly.
- 4.
Meanwhile, mix together peanut butter and Truvia® Sweet Complete Sweetener in a small bowl until smooth.
- 5.
Add about 1 teaspoon of peanut butter mixture on the top chocolate layer.
- 6.
Top each with another teaspoon of melted chocolate to cover peanut butter layer completely.
- 7.
Place in freezer for an additional 10-15 minutes, or until fully set.
- 8.
Store in refrigerator in an airtight container for up to 1 week.
