Roasted Beat Goat Cheese Salad Detail

Sweet Roasted Beet and Goat Cheese Salad with Truvía® Cane Sugar Blend 

This sweet and savory salad is as pretty as it is delicious! Made with Truvía® Cane Sugar Blend, this recipe contains 14% fewer calories and 40% less sugar* than the full-sugar version. Makes 6 servings.

  • Serving Size: 1 cup (118g)


  • 5 medium beets, cleaned, peeled and cut into chunks (red and yellow)

  • 12 tbsp oil


  1. 1 tsp rosemary

  2. 12 tsp salt

  3. 1 tsp ground black pepper

  4. 2 tsp Truvía® Cane Sugar Blend

  1. 1 tbsp Dijon mustard

  2. 1 tbsp red wine vinegar

  3. 12 tbsp oil

  4. 1 12 tsp Truvía® Cane Sugar Blend

  1. 3 cups mixed greens, washed and toweled dry

  2. 3 oz. low fat goat cheese

  3. Preheat oven to 400 degrees F

  4. In a bag, toss the beets with oil, rosemary, salt, pepper and Truvía® Cane Sugar Blend to coat the beets.

  5. Spread the beets in a single layer on a baking sheet.

  6. Bake beets 45 minutes or until all are tender, stirring after 20 minutes.

  7. For dressing, whisk the mustard, vinegar, oil and Truvía® Cane Sugar Blend together until dissolved.

  8. In a large bowl, pour dressing over the greens and toss to coat.

  9. Add the beets then toss.

  10. Top with cheese.

*Each serving has 120 calories and 6 grams of sugar per serving, compared to the full-sugar version that has 140 calories and 10 grams of sugar per serving.
