Piña Colada Sorbet with Truvía® Nectar

If you like Piña Coladas, you’ll love this sorbet version of the tropical drink from Chef Devin Alexander. The perfect treat for a hot summer day, this recipe is made with Truvía® Nectar and has only 170 calories* and 19 grams of sugar* per serving. Makes 4 servings.

Ingredients

  • 4 ice-cream cone waffle bowl (use one that had 50 calories)

  • 4 cups frozen, unsweetened pineapple chunks

  • ½ cup light coconut milk (the canned one from the international aisle)

  • 1 teaspoon Truvía® Nectar

  • 2 tablespoons unsweetened, reduced-fat shredded coconut

  • 2 teaspoons coconut rum 

Directions

  1. Place the frozen pineapple chunks in a food processor fitted with a chopping blade.  

  2. Process until finely chopped. 

  3. Add the coconut milk and process until just smooth, scraping the sides of the food processor bowl with a spatula if needed.  

  4. Add the Truvía® Nectar, coconut, and the rum. 

  5. Continue processing just until well combined (be careful not to over process it or it will start to melt). 

  6. Using a ¼ cup ice-cream scoop, scoop out 4 small scoops or if using a ½ cup ice-cream scooper, scoop out 2 big scoops of sorbet in each waffle bowl. 

  7. Serve immediately, freeze leftovers.

*Each serving has 170 calories and 19 grams of sugar per serving, compared to the full-sugar version that has 180 calories and 20 grams of sugar per serving.
