Ingredients
Christmas Sprinkle Cookies
2¼ cups (270g) all-purpose flour
½ teaspoon kosher salt
1 large egg
2 teaspoons pure vanilla extract
1 cup red, green and white sprinkles, plus more for rolling
½ cup sugar-free dark chocolate chips or baking chocolate
Directions

Preheat oven to 350°F and line 2 baking sheets with parchment paper.

Whisk together flour, baking soda and kosher salt in a medium bowl. Beat softened butter and Truvia® Sweet Complete® Granulated Sweetener until light and fluffy. Add the egg and vanilla, mixing until smooth.

Gradually add the dry ingredients to the wet mixture, stirring just until combined. Scoop the dough into rounded 2-tablespoon-sized balls. Roll each dough ball in sprinkles and place onto prepared baking sheet about 2-inches apart.

Bake for until the edges are just golden, about 10 minutes.

Let the cookies cool on baking sheet at least 5 minutes before transferring to a wire rack to cool completely.

Meanwhile, melt the sugar-free dark chocolate in 20-second bursts, stirring between each interval, until smooth.
- 7.
Drizzle over the cooled cookies or dip bottoms. Let chocolate set completely before serving.
- 8.
