Sweet Potato Pie Recipe with Truvía® Natural Sweetener

Ingredients

  • Pastry for single-crust 9-inch pie

  • 3 medium sweet potatoes

  • 14 cup unsalted butter

  • 13 cup + 2 tsp of zero-calorie Truvía® Natural Sweetener Spoonable

  • 34 cup skim milk

  • 3 eggs, large

  • 2 tsp vanilla extract

  • 14 tsp salt

  • 12 tsp cinnamon, ground

  • 12 tsp nutmeg, ground

  • 18 tsp allspice, ground

  • Light whipped topping, optional

Directions

  1. Assemble all ingredients; preheat oven to 400° F.

  2. Wash exterior of each potato, prick several times with a fork and bake until tender 60–75 minutes. Cool potatoes to room temperature.

  3. Scoop interior flesh of baked potatoes into a medium bowl (no skin). Mash potatoes until smooth.

  4. Melt butter and add to sweet potatoes.

  5. In a separate small bowl, whisk together Truvía® Natural Sweetener, skim milk, eggs, vanilla, salt and spices.

  6. Add spice-egg mixture to potatoes.

  7. Mix until well combined smooth mixture.

  8. Carefully transfer pie to oven and bake on bottom rack until filling is just set approximately 35–45 minutes. Transfer to a wire rack to cool.

Optional
  1. Garnish with light whipped topping

  2. For an extra crisp bottom crust, preheat a shallow baking pan in oven for a few minutes before placing unbaked pie on it to bake.

*This sweet potato pie has 260 calories and 5 grams of sugar per serving as compared to the full-sugar version that has 370 calories and 33 grams of sugar per serving.

On this Easter holiday I decided to try your Sweet Potato Pie with Truvia. Being a borderline diabetic I am very careful with what I eat These were the most wonderful of wonders. At days end everyone was thanking me for cooking them. If you are not a lover of sweet potatoes do not male a judgement on this. They are the most wonderful thing you will ever put in your mouth. To eat is to love Thanks so much for sharing such a treat for me and my family.

Using this recipe with Truvía® Natural Sweetener Spoonable in place of sugar was a winner! Each bite was smooth, moist and full of flavor. Squeals of joy were heard through the house as my party goers learned their dessert contained less calories without compromising taste! This recipe was quick and easy to prepare adding a "thumbs up" to the celebration :)

My father is a senior citizen and loves sweet potato pie. Now I can make this for him and he can enjoy a taste of home! It's cream and rich and healther! SCRUMPTIOUS!

I substituted some of my sugar for the sugar free brown sugar and a little pumpkin pie spice since I didn't have allspice. It turned out great and he loves it.
