Sweet Orange Pomegranate Tartlets with Truvía® Nectar

These bite-sized tartlets are as cute as they are delicious! Developed by Chef Devin Alexander, these Sweet Orange Pomegranate Tartlets may be mini, but they pack a citrusy-sweet punch. Made with Truvía® Nectar, this recipe has 44% less sugar* than the full sugar version. Makes 8 servings.

Ingredients

  • 1 cup low fat ricotta cheese

  • 4 egg whites*

  • 2 tablespoons Truvía® Nectar

  • 2 teaspoons vanilla extract

  • 2 teaspoons orange zest

  • 32 mini phyllo cups

  • 14 cup pomegranate arils (seeds)

Directions

  1. Preheat oven to 350º F. Line a medium baking sheet with nonstick foil. 

  2. In a medium mixing bowl, using a sturdy whisk, mix the ricotta, egg whites, Truvía® Nectar, vanilla, and orange zest until well combined. 

  3. Divide the mixture evenly among the phyllo cups. 

  4. Then use the back of a spoon to level the tops.  

  5. Place them side by side on the lined baking sheet.  

  6. Bake them until the filling is warm and the shells are a light golden brown, about 14-18 minutes.  

  7. Allow them to cool for 3 minutes.  

  8. Divide the pomegranate arils evenly among them, placing a few arils each on the tops. 

  9. Enjoy immediately.  

  10. Refrigerate any leftovers in a sealed container.

*Each serving has 120 calories and 5 grams of sugar per serving, compared to the full-sugar version that has 130 calories and 9 grams of sugar per serving.
