Ingredients

**pumpkin pie spice may be substituted with: 12 ground cinamon 14 ground ginger, 18 tsp ground nutmeg, and a pinch of allspice.

Directions

    Assemble all ingredients.

    Combine dry ingredients in large mixing bowl.

  • 3.

    In separate bowl, combine eggs, milk, oil and pumpkin; mix.

  • 4.

    Add pumpkin mixture to dry ingredients and mix until large lumps disappear.

  • 5.

    Heat non-stick skillet over medium heat until a drop of water skitters around pan; Pour 14cup batter for each pancake onto hot skillet.

    Cook 1 or 112 minute until bubbly and turn; cook on other side until golden brown.

    Serve with a spoonful of hot applesauce or traditional maple syrup.

Rated 5 out of 5 by from Perfect pancakes I have had plenty of pumpkin pancakes, but they don't compare to these. They were delicious! I subbed applesauce for the eggs to make them vegan and everyone loved them
