Nanaimo Bars Recipe with Truvía® Natural Sweetener

From its origin in Nanaimo, British Columbia, this traditional bar is rich and filling. This recipe, made with Truvía® Natural Sweetener, has 20% fewer calories* and 55% less sugar* than the full-sugar version. Makes 25 bars.

Ingredients

Bottom Layer
  • 12 cup unsalted butter

  • 1 Tbsp + 1 tsp of zero-calorie Truvía® Natural Sweetener Spoonable***

  • 13 cup unsweetened cocoa powder

  • 1 egg, pasteurized

  • 1 tsp vanilla extract

  • 2 cups graham cracker crumbs

  • 1 cup unsweetened shredded coconut

  • 12 cup chopped walnuts

Filling
  • ½ cup + 1 Tbsp of zero-calorie Truvía® Natural Sweetener Spoonable***

  • 1 tsp corn starch

  • 14 cup unsalted butter, room temperature

  • 12 cup powdered sugar

  • 2 Tbsp skim milk

  • 2 Tbsp vanilla custard powder or vanilla pudding mix

  • 1 tsp vanilla extract

***or 32 packets of zero-calorie Truvía® Natural Sweetener
Topping
  • 4 ounces semisweet chocolate

  • 1 Tbsp unsalted butter

Directions

Bottom Layer
  1. In a saucepan over low heat, melt the butter.

  2. Remove from heat and stir in the Truvía® Natural Sweetener and cocoa powder. Whisk in the beaten egg. Return the saucepan to low heat stirring constantly until the mixture thickens (1 - 2 minutes).

  3. Remove from heat and stir in the vanilla, graham cracker crumbs, coconut, and walnuts.

  4. Press the mixture into a greased 9” square pan. Cover and refrigerate until firm (about an hour).

Filling
  1. In a coffee or spice grinder, mix the Truvía® Natural Sweetener and corn starch until it resembles powdered sugar.

  2. In a separate bowl, beat the butter until smooth. Add the rest of the ingredients, including the powdered Truvía® Natural Sweetener and beat until the mixture is smooth. If the mixture is too thick to spread, add a little more milk.

  3. Spread the filling over the bottom layer, cover, and refrigerate until firm (about 30 minutes).

Topping
  1. Chop the chocolate into small pieces. Over low heat, melt the chocolate and butter.

  2. Spread over the filling and refrigerate for at least 10 minutes to allow the topping to harden.

*This bar has 160 calories and 7 grams of sugar per serving as compared to 200 calories and 16 grams of sugar per serving in the full-sugar version.
