    Add 1 Tbsp of coconut to an appetizer plate or shallow bowl. Set it aside.

  • 2.

    Using a food processor fitted with a chopping blade, process the dates on high speed until finely chopped.

  • 3.

    Add the lemon zest and Truvia Original Sweetener. Blend again until well-combined.

  • 4.

    Transfer the mixture to a small mixing bowl.

  • 5.

    Add the remaining coconut to the date mixture.

  • 6.

    Using a rubber spatula, mix the ingredients together until well combined.

  • 7.

    On a sheet of waxed paper or parchment, divide the mixture into 6 equal portions.

  • 8.

    Pack and roll each portion in your hands to form a ball.

  • 9.

    Gently roll them in the awaiting coconut.

  • 10.

    Enjoy immediately or store them in a re-sealable container for up to 3 days.
