Lemon Coconut Balls with Truvía® Nectar

These sweet, no-bake treats by Chef Devin Alexander are packed with flavor from tangy lemon, crunchy coconut, and sweet dates. This recipe is made with Truvía® Nectar and contains only 120 calories per serving.* Makes 3 servings.

  • 15 pitted dried dates*

  • 2 tablespoons lemon zest from a washed lemon

  • 1 tablespoon Truvía® Nectar

  • 3 12 tablespoons unsweetened reduced fat coconut flakes, divided

*Even if you buy pitted dates, make sure there are no pits inside


  1. Add one tablespoon of coconut to an appetizer plate or shallow bowl. Set it aside.

  2. Using a food processor fitted with a chopping blade, process the dates on high speed until finely chopped.

  3. Add the lemon zest and Truvía® Nectar, and blend again until well combined. 

  4. Transfer the mixture to a small mixing bowl.  

  5. Add the remaining coconut to the date mixture. 

  6. Using a rubber spatula, mix the ingredients together until well combined. 

  7. On a sheet of waxed paper or parchment, divide the mixture into 6 equal portions. 

  8. Pack and roll each portion in your hands to form a ball. 

  9. Gently roll them in the awaiting coconut. 

  10. Enjoy immediately or store them in re-sealable container for up to 3 days.

*Each serving has 120 calories and 24 grams of sugar per serving, compared to the full-sugar version that has 130 calories and 26 grams of sugar per serving.
