Jalapeño & Ham Corn Muffins with Truvía® Nectar

These muffins - created by Chef Devin Alexander - are a perfect combination of sweet, spicy and savory. The bonus? Each serving contains 18% fewer calories* and 46% less sugar* per serving than the full-sugar version.


  • 12 jalapeño rings (extremely thin cut from the stem end of the jalapeño, after stem is trimmed off)

  • Canola oil spray

  • 1¼ cup yellow cornmeal

  • 1 cup whole wheat pastry flour

  • 1 Tbsp baking powder

  • 1 tsp sea salt

  • 4 large egg whites

  • ¼ cup Truvía® Nectar

  • 1 cup + 2 Tbsp reduced-fat buttermilk

  • ¼ cup melted unsalted butter

  • 7 oz extra lean ham steak, cut into ¼-inch cubes

  • ¼ cup + 2 Tbsp finely chopped jalapeño peppers


  1. Preheat the oven to 350°.

  2. Mist 12 cups of a standard muffin tin with Canola oil spray.

  3. Using a whisk, mix the cornmeal, flour, baking powder and salt in a bowl. In a separate bowl, using the whisk, mix the egg whites, Truvía® Nectar and buttermilk.

  4. Add the dry ingredients and mix.

  5. Mix in the butter, then stir in the ham and chopped jalapeños.

  6. Divide the mixture evenly among the prepared pan, about ½ cup batter in each.

  7. Top each with 1 jalapeño ring.

  8. Bake about 16-20 minutes. Enjoy warm!

* Makes 12 muffins. Each serving has 170 calories and 7 grams of sugar per serving compared to the full-sugar version that has 200 calories and 13 grams of sugar per serving.

Rated 5 out of 5 by from Just the right amount of spice and flavor Loved these muffins! I didn't make any alterations, just perfect and flavorful as is. It was not too spicy, but you could always spice it up if you like. Add some butter before eating if you prefer, but to me they didn't need it.
