Grilled Asparagus Soup Recipe with Truvía® Nectar

This vegetable soup has a touch of spice and sweet and tastes great hot or cold. This reduced-sugar soup contains 10% fewer calories* and 29% less sugar* than the full-sugar version. Makes 6 servings.

Ingredients

  • 2 Tbsp olive oil

  • 34 Tbsp sriracha hot chili sauce

  • 2 lbs. asparagus, cleaned and trimmed

  • 2 Tbsp butter

  • 1 small onion, finely chopped

  • 14 tsp salt

  • 3 Tbsp flour

  • 2 Tbsp Truvía® Nectar

  • 14 tsp coriander

  • 14 12 oz. reduced sodium chicken broth

  • 1 cup skim milk

  • 1 Tbsp lemon juice

Directions

  1. Pre-heat grill or grill pan to medium heat.

  2. Stir together sriracha sauce and olive oil.

  3. Place cleaned asparagus and oil mixture into a sealable bag and shake until asparagus is well coated. Remove from bag and place on grill.

  4. Grill asparagus about 5 minutes, turning over at least once.

  5. Remove from grill, cut, all but 6 stems into 12 inch pieces and set aside.

  6. Cut the 6 remaining stems into 2 inch pieces, set aside as garnish.

  7. In a large saucepan, melt butter over medium heat.

  8. Add onions to hot butter and cook for 3-5 minutes or until onions are soft.

  9. Stir in salt and Truvía® Nectar and mix for 1 minute.

  10. Sprinkle in flours and coriander, stirring until a paste.

  11. Slowly whisk in chicken broth, half of the milk (½ cup), and lemon juice.

  12. Add all the ½ inch pieces of asparagus.

  13. Bring soup to a slight boil.

  14. Simmer uncovered for 10 minutes, or until soup thickens. Make sure to stir several times.

  15. Remove from heat and cool for 5 minutes. Add other half of milk (½ cup) to help cool further.

  16. Puree the soup using an immersion blender until smooth. If you don’t have an immersion blender, puree soup in a regular blender while making sure the soup is cool before blending, which helps prevent hot contents from flowing out of the topped blender.

  17. Return to pan and medium heat until warm.

  18. Divide into bowls and garnish.

*This soup has 170 calories and 12 grams of sugar per serving, compared to the full-sugar version that has 190 calories and 17 grams of sugar per serving.

Rated 5 out of 5 by from Surprising taste kick! I love asparagus but was hesitant to try this recipe because of the siracha sauce and the Truvia nectar. I was surprised at the combination of sweet and sour. I had not tried sweet-sour with asparagus before this. It was wonderfully gentle -- not in-your-face hot nor mouth-puckering sweet. Just enough to enhance the flavor of asparagus. I highly recommend.
