Classic Corn Bread Recipe

A simple corn bread recipe that you can use for any meal. This recipe contains 17% fewer calories and 70% less sugar* than the full-sugar version. Makes 8 2x4 pieces.

Ingredients

  • Cooking spray

  • 1 13 cup yellow cornmeal, degermed, enriched

  • 1 14 cup all-purpose flour

  • 14 cup Truvía® Cane Sugar Blend

  • 2 tsp baking powder

  • 12 tsp salt

  • 1 cup sweet corn, thawed if frozen

  • 23 cup milk

  • 14 cup vegetable oil

  • 1 large egg, beaten**

Directions

  • 1.

    Preheat oven to 400°F; Position rack in center of oven.

  • 2.

    Spray 8-inch square pan with cooking spray.

  • 3.

    In a large bowl, whisk together cornmeal, flour, Truvía® Cane Sugar Blend, baking powder and salt.

  • 4.

    Puree corn in food processor.

  • 5.

    Add pureed corn, oil and beaten egg to the flour mixture.

  • 6.

    Stir until blended.

  • 7.

    Bake until edges begin to pull away from pan sides and tester inserted into center comes out clean, about 15-20 minutes.

  • 8.

    Cool in pan on rack.

  • 9.

    Once cool, slice and enjoy.

  • 10.

    Store unused portion in sealed container.

I followed the recipe as is, except that I also added a small can of diced green chilies and a handful of shredded cheese. It turned out so good! No one could tell it wasn't made with sugar!

Has 70% less sugar then regular store bread and is easy to prepare. My husband eats this when he comes in from work at night .It satisfies his hunger without being heavy on his stomach. Because you make this at home it is packed full of love too - Can't find that in any grocery store. Try some today - you'll be glad you did.

I tried this recipe using Truvia which reduces the amount of sugar by 70%. It is tender and delicious and allows me to enjoy the cornbread I love again. Try it. I think you'll love it.

It was just the right sweetness without the calories and for a change my husband was able to eat more than 1 small piece since he is a diabetic and has to limit sugar as well as carbs. I am glad I found this and will make it often.
