These caramel cheesecake bites taste truly decadent. Created by Baking Star contest judge April Athena of CookWithApril, these bars have 34% less sugar* per serving than the regular sugar-sweetened version. Makes 24 pieces (approximately 2-inch squares).
Preheat oven to 350° F. Combine graham cracker crumbs, Truvia Cane Sugar Blend, and melted butter in a medium bowl. Press crumb mixture firmly into a foiled 9” x 13” pan. Bake crust at 350° F for 10 minutes.

In a separate bowl, combine softened cream cheese, Truvia Brown Sugar Blend, and flour with a hand mixer. Next, add sour cream and vanilla extract and continue mixing. Finally, mix in eggs.

Heat caramels and water in microwave for 30 seconds until melted. Pour about 3⁄4 of the caramel sauce into cheesecake batter and mix. Pour batter onto crust.

Bake at 350° F for 40 minutes.

Cut cooled bars into 24 (approximately 2” square) bites. Store refrigerated.
6.
Top bites with chopped walnuts and drizzle with remaining caramel sauce before serving.
*These bars have 320 calories and 17 grams of sugar per serving compared to the full-sugar version which have 340 calories and 26 grams of sugar per serving.

Love, Love this Cheesecake!I love cheesecake but don'the love the calories. This is a win win. I made it for my weekly knitting night and the girls Loved them, once they found out it was half the calories they loved it more. I did change it up a bit, I'm not a Caramel fan, so I made a blackberry compote using truvia instead of sugar. It came out wonderfully!

wonderful and deliciousI made these for my family reunion in August and they were a big hit . No one could tell that they were made with Truvia but they were pleasantly surprised . Its so good tasting you can't even tell it was made without using real sugar. I will make these every year we love cheesecake and this one does not fail .
