1. Preheat oven to 400° F. In a small bowl, combine Truvia
® natural sweetener, cumin, coffee, chili powder, paprika, cocoa powder, salt, coriander, and cayenne and stir. Rub mixture all over tenderloin to evenly coat.
2. Heat oil in a large skillet over medium high heat. Add pork and sear until browned on all sides, about 5 to 8 minutes total. Transfer to a rimmed baking sheet and bake until a thermometer reaches 145° F, about
20 to 30 minutes. Let rest 5 minutes before slicing.
3. Great with roasted vegetables like carrots or potatoes and a large green salad.
