These fluffy pumpkin pancakes are a perfect weekend treat that the whole family will enjoy. Made with Truvía™ natural sweetener, these pancakes have no added sugar.
Yield: 8 Servings (2 pancakes per serving)

2 cups all purpose flour
4 packets Truvia™ natural sweetener
1 Tbsp baking powder
1 tsp pumpkin pie spice*
¼ tsp salt
2 large eggs
1¾ cup skim milk
3 Tbsp canola oil
½ cup pumpkin puree
*pumpkin pie spice may be substituted with ½ tsp ground cinnamon, ¼ tsp ground ginger, 1/8 tsp ground nutmeg, and a pinch of allspice
1. Assemble all ingredients.
2. Combine dry ingredients in large mixing bowl.
3. In separate bowl, combine eggs, milk, oil and pumpkin; mix
4. Add pumpkin mixture to dry ingredients and mix just until large lumps disappear.
5. Heat non-stick skillet over medium heat until a drop of water skitters around pan; Pour ¼ cup batter for each pancake onto hot skillet.
6. Cook 1 or 1½ minute until bubbly and turn; cook on other side until golden brown.
7. Serve with a spoonful of hot applesauce or traditional maple syrup.
